‘Ever since I was little I have always valued the importance of meal times shared with loved ones, which has continued into my adult years. The focus upon sitting up a table together, limiting distractions and allowing a time to connect sharing stories and experiencing nourishment together.’

A LITTLE SOMETHING COLOURFUL TO SHARE AT YOUR NEXT DINNER PARTY!

butterfly pea and blue berry tart recipe for healthy vegan and colourful dessert inspiration

Ingredients

FOR THE CRUST:

  • 1 cup of nuts (we used a combination of cashew and almonds)
  • 1 cup of shredded coconut
  • 2 tablespoons of hibiscus powder (to colour the crust)
  • 4 dates
  • 1 tablespoon of coconut oil

FOR THE FILLING:

  • 2 tins or cartons of coconut cream (remove excess liquid) (we used blue dragon)
  • 1 cup of blueberries
  • A small handful of blue butterfly pea flowers - fresh or dried (easy to grow!)
  • 4 tablespoons of agave syrup
  • 1 tablespoons of corn starch
  • 2 heaped teaspoons of agar agar
  • 1 teaspoon of elderflower essence (or choice of flavour)

FOR THE DECORATION:

  • Edible flowers (including chicory and violas)
  • Handful of blueberries and cherries

Instructions or Guidelines

  • Soak dates in warm water to soften.
  • In a blender mix crust ingredients of nuts, shredded coconut, beetroot powder, dates and coconut oil. Until it becomes a consistent mixture.
  • Spoon into a 20cm false bottom tart tin, pressing in with a spoon to form a base.
  • Leave in the fridge to chill and solidify.
  • Soak 2 teaspoons of agar agar in a little trickle of water to cover for 10 mins. Add the cornstarch to form a paste. Add more agar agar if you prefer a more set consistency.
  • In a medium saucepan heat the coconut cream until smooth.
  • Add the blueberries and butterfly pea, squishing to release the tone. When the desired colour is reached, sieve out the bits so the coloured cream remains.
  • Add the agar agar and cornstarch paste - stirring until it thickens, adding the essence or flavourings.
  • Pour into the crust and allow to cool.
  • Decorate, fill with colour, flowers and everything you love.
  • There is so little chance this will last long enough to store, but if so an airtight container for a maximum of 4 days.
